- Every month, our club members receive three, half-pound blocks of freshly-cut extraordinary cheeses chosen from the finest boutique traditional cheese manufacturers the world has to offer. You might receive an Italian Taleggio matured in the caves of Valsassina, a Gaperon, originating in France during the 1300s, and a traditional Lancashire by Ruth Kirkham...all in the same shipment! Also accompanying each monthly shipment is our entertaining and informative newsletter.
Our Professional Selection Process Ensures Quality, Variety & Freshness
From our very first shipment, the cornerstone of our success has been our expert product selection and packaging process. We partner with Zingerman's Delicatessen®, which has been rated the # 1 Deli in the country by Zagats, and has experience importing the finest artisanal cheese since 1982. Together, we select authentic and traditional farmhouse cheeses made from raw milk and natural ingredients. Our goal is to discover great boutique cheeses that you wouldn't easily find on your own and then purchase and import each from its place of origin...So we look for Brie from the Ile de France, north of Paris, not in Wisconsin.
Selected for prominence, quality, and creative interpretation, each featured selection is cut just prior to shipping from huge wheels or blocks. For some cheeses, such as Antique Emmentaler, that means cutting apart wheels that are almost 4 feet in diameter and weigh 200 lbs! Depending on what part of the wheel it comes from, each piece will have a slightly different shape and may also have a slightly different taste, and that's part of the charm that come with these authentic hand-made creations. While it might be quite labor intensive, it's what is necessary to enjoy the real thing. Our optimized "cheese cave" strictly maintains the proper temperature, light, and humidity levels to ensure featured cheeses are properly stored, tended and matured.
